Banana Hemp & Tahini Power Porridge by Catherine Arnold Nutrition

I am a nutrient pusher, i hold my hands up and admit, its become an obsession to see how many nutrients i can cram in to one meal! I call this power porridge because it should keep you fuelled all morning.

It has a superb wholesome flavour and you can feel truly virtuous whilst eating it as its packed with protein, essential fatty acids, and cholesterol lowering phytosterols from the tahini, quinoa and hemp powder/seeds. Blending the bananas seems to enhance the taste, i always used to mash them before but this method is hands down the tastiest. For those who can’t tolerate oats, buckwheat flakes are glutenfree and a good alternative.

serves 1

Ingredients:

1/3 cup glutenfree oats

2 tbsp quinoa flakes (just add more oats if you don’t want to use quinoa flakes)

1 1/4  cup almond milk or milk of choice

1 ripe banana

1/2 tbsp tahini (i use dark tahini which is more nutritious than the light version)

1 tsp hemp powder

1-2 tsp hemp seeds

1 tsp sesame seeds

Pomegranate molasses to serve (optional)

Method:

Put the oats and quinoa flakes into a pan along with 1 cup of milk and bring to a simmer, stirring continuously.  In a blender, put the banana, tahini, hemp powder and the remaining 1/4 cup of milk, blend until smooth. Once the porridge is cooked, pour the banana mixture into the pan and stir to mix. Pour the porridge into a bowl and drizzle with pomegranate molasses if using, top with hemp seeds, sesame seeds and any other topping you like.
