raw orange & beetroot buckwheat porridge by Catherine Arnold Nutrition

This has become one of my favourite breakfasts. Its quick to make, filling but light.  Its versatile too – replace the orange and beetroot with pineapple, mango or berries. Add superfood powders and added protein ingredients to increase its nutrient boost.

Buckwheat is high in phytonutrients called flavonoids which protect against heart disease and maintain healthy cholesterol levels. Its also high in magnesium which is essential for stress and helps us to relax. Buckwheat is not wheat at all, but is actually a fruit seed so it is suitable for those on a glutenfree diet.

Ingredients:

1/2 cup raw buckwheat groats

1 orange, peeled

1 tsp orange zest

30 g raw beetroot, peeled

Juice of 1/2 lemon

1-2 tsp raw honey or rice malt syrup

1/2 tbsp protein powder  eg. pea protein / hemp (optional)

2 tsp ground flax (optional)

Tiny pinch of himalayan salt

Method:

Soak the buckwheat groats in water overnight.

In the morning, drain and rinse the buckwheat and add it to a blender along with all the other ingredients.

Blend until smooth, pour into a bowl and garnish with nuts, seeds, and maybe a squeeze of orange juice.
