Star Anise Poached Plums by Catherine Arnold Nutrition

These plums are scrumptious on porridge for breakfast, but are also delicious enough for dessert with a dollop of coconut cream! I think they make a wonderful gift too, pile them into a jam jar and give to someone special.

Ingredients:

5-6 plums, cut in half down the side of the stone from top to bottom, leave the stone in.
Juice of 1.5 oranges
1 star anise

Method:

Put the orange juice into a small frying pan (I use a 20cm pan). Put the plums in, cut side down and then pop the star anise into the juice. Put a lid on the pan, and bring to a very gentle simmer for 15 minutes, keep the heat low for another  15 minutes until the plums are soft but still retain their shape and the liquid has reduced to a tasty syrup. Don’t let them dry out – be sure to keep them on the lowest heat and add more fresh orange juice if necessary. Remove the star anise immediately and either eat the plums warm or leave to cool. Remember to take the stones out (they should come out easily now) before eating!
