The Best Orange Icelolly by Catherine Arnold Nutrition

Over the summer months we make these ice lollies every week in our household. They are delicious, contain no added sugar, and are super hydrating as they’re made from coconut water.

Coconut water is a natural isotonic drink, it contains electrolytes which are essential for hydration and optimum healthy cells. It also contains B vitamins, amino acids, antioxidants and phytonutrients providing an anti-inflammatory, anti-aging and anti-cancer boost to your health too!

Makes 4-6 ice lollies depending on mould size

Ingredients:

1 orange, peeled

1 cup of coconut water

24 blueberries (4 per ice lolly) / or orange slices / pineapple slices

Method:

In a blender, combine the coconut water and peeled orange (remove any pips first). Blend completely and let the mixture settle as some froth may form, mix this in so its as liquid as possible.

Then put 4 blueberries (or 1 orange slice or 1 pineapple slice) into your ice lolly mould. Pour orange mixture into the moulds then place in the freezer to set for a few hours or overnight.
