Coriander & coconut chutney by Catherine Arnold Nutrition

This is a delicious spicey chutney which is very quick to make. A taste explosion with a chillie kick, its also packed with nutrients.

Coriander is a natural antibacterial and research suggests it may help with blood sugar balance and healthy cholesterol levels. It can also help detoxify the body of heavy metals. So an all round wonder herb, and it tastes so good too!

Ingredients:

1 large handful of coriander

20 fresh mint leaves

1 or 2 green chillies (depending on how hot you like it)

3 tbsp dessicated coconut or fresh coconut if you have it

Juice of 1/2 lemon

Pinch of salt (I use Himalayan salt)

1 tomato, roughly chopped

1 tbsp pumpkin seeds (optional but adds another nutrient boost!)

Method:

Put all the ingredients into a blender and blend until smooth. Taste and add more lemon/salt if needed.

Serve with curry, eggs, or as a dip for vegetable crudites or even sweet potato chips.
